ChefsWild Posted September 15, 2015 Report Share Posted September 15, 2015 The pictures came out sucky for some reason, but: Top a very vivid RED like a Red Delicious apple. Sticky when wet. Darkening a bit after picking. Stem also red, with a small amount of pinkish yellow near the top and red reticulate "netting" as deep as the average shaggy stalk. Bruises quickly but faintly blue on cap and stem. Taste is mild, perhaps faintly tart, but not anywhere near as lemony as a shaggy stalk. ChefsWild Posted September 15, 2015 Author Report Share Posted September 15, 2015 I think they are calling it Austroboletus betula now. By either name it is an amazing mushroom. Dehydrated it turns crisp and lemony. Fresh the stems are very citrusy and make a great pickle or mock crab cake once peeled. I use the peels separately to thicken soups (they are slimy) and have just dried a big batch to see if that property will hold for a mushroom "file powder".
