Species of Russula (mostly) have brittle stalks that snap into two pieces like a piece of chalk. Looks a bit like a Lactarius. Sometimes the latex is scant, and you need to gently press the cut flesh against a finger or a piece of paper to detect the liquid. However, I think this mushroom is an example of Hygrophoropsis aurantiaca.
