Dave W Posted November 11, 2020 Report Share Posted November 11, 2020 Thee mushrooms likely represent a species of genus Hypsizygus. There are two possibilities for the species, but according to Mushroom Expert the growth habit seen here --a small cluster as opposed to a single fruit body-- supports H. tessulatus over H. ulmarius. Despite often being found on live maples trees, Hypsizygus mushrooms are commonly called "Elm Oysters". Although edible. Hypsizygus is not related to the true Oyster Mushrooms (Pleurotus), and the quality is generally rated as lower than Pleurotus. Quote Link to comment Share on other sites More sharing options...

I fried up the elm oyster with onion and garlic and enjoyed it very much. True, not as tasty as the ‘real’ oyster, but having eaten many dishes of grey trichs lately I welcomed the new flavour.
