Bre_543 Posted October 21, 2018 Report Share Posted October 21, 2018 I believe these are fall oysters. I’m questioning because some had distinct ‘stem’ as seen in first photo. Also found a different type of oyster which were more white (the last two pics). Wondering if both these species are in fact oysters and if anyone knows the scientific names? Dave W Posted October 21, 2018 Report Share Posted October 21, 2018 Agree with eat-bolete about the two species. Note the difference in the gills. The "true Oyster Mushroom" (last two photos) more strongly decurrent than the Late Fall Oyster (P. serotinus). Pleurotus gills are often a bit more widely spaced and/or deeper than P. serotinus gills. Also, the P. serotinus gills are tinged yellowish/tannish. Of the two, Pleurotus ostreatus is the better edible. But I think P. serotinus is a decent edible. The ones seen here do have more substantial stalks than usual. The stalk portion may be kinda tough. I would discard the stalks. Sliced P. serotinus works well in Asian-style stir-fries that are flavored with soy sauce, oyster flavored sauce, and or hoisin. It has a chewy texture.
