Boondocks Farm
I’ve found cinnabar chanterelles here in central AR and I have a few very small patches of them growing. They are not very big in size. The question I have, how do you know when to harvest them? Some are about the size of a quarter at the biggest and from what I have read on them, they usually don’t get very big.
Monk
I have never seen these get very big at all. The one on the right is ready for sure. I usually pick them as long as the stipe has gotten firm, they have a nice peppery taste.
Boondocks Farm
Thanks. I kinda figured the ones looking like that may be ready. I’ll pick a few and try them.

CamilleR
My husband and I really like them. I'll pick them smaller than a quarter if they're prime.
Boondocks Farm
They were pretty good. Intensified the pepper we had in our meal. I just sautéed them with very little butter and a splash of white wine towards the end of the cook. Gave them a sweet pepper taste. Not bad.
