Dehydrate questions

I have found a king bolete which I am super excited about!!! This is the first edible besides chanterelle that I have found this far!  But it's big and I want to dehydrate most of it I have cut into 1/4" pieces but I do not have a dehydrater so I was planning on doing it in my convection oven.  I have it set for 170 cracked open a bit which is what I read was the best.  But should I cut the spongy part off or leave it??

The pore layer has the strongest flavor, when dried.  If you grind it to a powder, it makes a great seasoning.  Very umami.

I've mixed bolete powder with butter and put it on toast, noodles, steak, crackers, salmon, etc.  The powder also goes well in risotto.

Don't grind until you're ready to use it.

I have several Spring Kings drying right now.
