Gladrich
Hello Shroomers. I have found a large colony of these mushrooms ( Boletus Edulis) in my back yard under some big white pines. I have noticed that as they age the color of the pores change finally coming to an olive green. I am wondering if this effects the flavor and if they should be harvested at the white or yellow stage or if it makes no difference. thanks much! CamilleR
If I had them that close to me I would pick them as soon as possible while the pores are still white. I've never tasted them though.
vitog
If you can pick them at the white pore stage, they will be a lot firmer and less likely to be wormy. At the yellow pore stage they are only fit for drying, and they need to have the pores removed.
Gladrich
Thanks for the replies. A lot of them are in the olive green stage at this point.
troutddicted
We dry all our kings - as vitog mentioned before RE: removing the pores, the big ole soggy ones get that treatment with us if of course theyre not buggy
