Old Oak Posted April 26, 2017 Report Share Posted April 26, 2017 Found a cool use for these. I haven't tried it yet. There's a restaurant in Minneapolis that lacto ferments these for three days. You can't eat them straight but they add a huge umami boost when used in other dishes. I'll give it a try one of these days and report back. Dave W Posted April 26, 2017 Report Share Posted April 26, 2017 Yup, Auricularia. The most common NA species is now called A. americana (last I checked... These things tend to change quickly.)
