Dave W Posted July 13, 2015 Report Posted July 13, 2015 Wow! That's a really black Black Staining Polypore. Probably worth experimenting with. I have eaten this species. The ones I've seen haven't been quite so black stained. But it certainly looks like Meripilus sumstinei.

A long simmer in coconut milk, miso, green curry paste and shiso infused vinegar followed by a slow dehydration to a barely moist texture. I love mature polypores as they come out beautifully "meaty" with this recipe. Also ran a wild mushroom pate with ginger and cashews that I'll be serving with a pickled apricot, wild shiso and poor man's pepper chutney. For the meat eaters, a cold rabbit and turkey mincemeat pie with magnolia infused brandy, pickled magnolia and candied ginger. If I get any *^%$@ chanterelles, which I have not so far, I want to run a chanterelle tonka bean ice cream. So far every spot I've scouted was empty. There will be a Lactarius indigo sorbet at least since I got a few of those.
