I'm interested in reading about the genetics, structure, and physiology of fungus, or mushrooms in particular. It would be great to find something that starts out simply and builds in complexity... any suggestions welcome!

Not sure if it's exactly what you're after, pumplinpen, but it looks like a very informative/entertaining book. http://namyco.org/book_reviews/Kingdom_of_Fungi_Petersen.html A book I have that includes a lot of information on the biology of fungi is "The Kingdom Fungi, The Biology of Mushrooms, Molds, and Lichens" by Steven L. Stephenson.
