ZUnit Posted May 15, 2024 Report Posted May 15, 2024 I see a lot of articles online telling people it is safe to consume Portobello mushrooms raw. They contain hydrazine a toxin used in making rocket fuel. It is heat sensitive and abolished when cooked. Sure there might be a couple kinds of store bought mushrooms you could eat raw but I don't think it's a good idea at all. You lose out on the medicinal compounds and they are hard to digest because of the chitin in the cell walls. There is also some concern about bacteria and parasites. What do you all think about this? Do you eat raw mushrooms from the store and which ones do you like if you do? Quote
JOHNY Posted May 15, 2024 Report Posted May 15, 2024 Sure I will eat raw white buttons along with raw veggies for a Crudités appetizer plate I have never eaten raw Crimini but it should be fine since they are the same species as the white buttons. I have seen European Book recipes that include raw Porcini sliced into salads and other veg mixes. I would never do this because 1) European King Boletes are probably not the same species as what North Americans call Kings/Porcini. 2) The rare chance of finding a tiny white worm wiggling out of a raw Porcini slice into my salad is too disgusting to contemplate. I have no doubt I have eaten the white worms in some Boletes by accident but when they are fried hard and mixed into pasta or rice you can't see them. Quote
CamilleR Posted May 19, 2024 Report Posted May 19, 2024 Interesting, I never researched this and I always cook all types of mushrooms now. I remember a long time ago at salad bars they had raw sliced button mushrooms and I would get them. Never had a problem. Don't see that now though. Quote

Shitake mushrooms contain formaldehyde and it is abolished when cooked properly. Shitake and Portobello seem to be the most concerning because I know people eat these raw sometimes. Quote

Raw white buttons are definitely a safe choice for a Crudités appetizer plate, and you're right about Crimini being fine to eat raw as well since they’re just the brown version of white buttons. The idea of adding raw Porcini to salads, as seen in European recipes, does sound intriguing, but I understand your hesitation—those tiny white worms are an unpleasant surprise! Once cooked, though, any trace of them disappears, and as you said, mixed into pasta or rice, you wouldn’t even notice. Quote
