Albatrellus seems like a good proposal for the whitish polypore. If correct, this one should have been found growing on the ground. This one looks to be a bit past prime for culinary experimentation. Fresh specimens have firm flesh that may respond well to marinating.

The white ones look like Rhodocollybia maculata. The young specimens seen here have not yet developed the yellow spots on the caps which are the namesake of "maculata." I have never tried eating this type. They are reported to be bitter and tough-fleshed.
