Dave W Posted April 29, 2021 Report Share Posted April 29, 2021 "Champignons" is a generic word that may be applied to almost any desirable edible mushroom with gills (not pores... which would be a "bolete" or "polypore"). Traditionally, I believe that the French-based word "champignons" has been used to refer to either edible types of Agaricus (Agaricus bisporus, A. campestris, etc) or possibly the species Marasmius oreades.
